The 2012/2013 growing season at Emu Bay was ideal. A wet winter and spring was followed by a cool and dry summer. The fruit ripened quickly and was harvested in late March. The resulting base wine “Kai’s Cabernet” is exceptional. Rated 94 Halliday points, “Kai’s Cabernet” was matured on new French and American oak for 2 years and the select sparkling wine spent another 3 and a half years gracefully developing on lees.
Gorgeous, deep, crimson red, typical of SnowDragon Wines, on top of which the fine, persistent bead forms a creamy red mousse. Red currant and mixed berries with a lifted, leafy and forest floor aroma, distinctly cabernet sauvignon. The palate is rich and rewarding with blackcurrant flavours balanced by mouth filling tannin and a hint of satisfying sweetness. This wine is warming and rich with a lingering berry fruit finish.
Brilliant to drink now but will continue to improve in the cellar for 10 years!
