The 2003/2004 growing season was very good. A wet winter and spring was followed by a cool and dry summer. The fruit ripened quickly and was harvested in late March.
The base wine was impressive, with great depth of flavour and an intense savoury nose. The colour is a deep, dense red – very typical of SnowDragon wines. It has lifted, distinctively cabernet sauvignon leafy aromas which are tobacco-like. Hints of toasty and spicy oak compliment the rich, savoury and complex aromas. The palate is full bodied and very flavoursome, with rich berry flavours alongside some lovely oak. It is relatively dry for a sparkling red wine, and the fine, persistent bead forms a soft, gentle mousse.
The wine has seen prolonged oak maturation in French oak. This sparkling wine continues to improve with bottle maturation and is brilliant in 2013!!!
