SPARKLING SHIRAZ 2012 METHODE TRADITIONNALLE Limited Release
Peppery, plum and refreshingly dry. Sophisticated and celebratory streams of creamy bubbles make this a sensual wine to enjoy with special friends.
Picked in early March 2012, this delicious wine spent nearly 4 years in the winery. The Shiraz 2012 was matured in French and American oak for 2 years before a small amount was transferred into SnowDragon skittles for sparkling by the traditional or “champagne” method. It then underwent a second ferment and gently aged on lees for another 18 months before being riddled, disgorged, dosed and capped in December 2015! It is refreshingly dry for a sparkling red wine – very typical of SnowDragon Sparkles – and the fine, persistent bead forms a soft, gentle mousse, worthy of the wait.
Deep plum in colour this sparkling wine is lifted and fragrant with a distinctive violet perfume. The base wine was fruit-forward and dominant plum and raspberry flavours are balanced by white pepper and cedar, tantalising the palate with it’s defined Shiraz varietal character.
Gorgeous to drink now but if you wish to cellar this SnowDragon Sparkling Wine for 5 or 10 years, it will reward your patience with refined elegance.
